The recipe can be prepared by mixing almost any type of cheese, so we can give it a different touch from one time to another, changing one or more of the cheeses that make it up. This one that we are going to prepare now is simple to make and has a rather mild flavor.
To start you have to peel the onion and chop it into very small pieces, although if you like to leave it chopped into larger pieces to better appreciate them when you eat the sauce, you can do it, always do it to your liking. At the end we are going to melt the butter with a drizzle of virgin olive oil in a large pan or saucepan, and when it is melted add the onion and add salt on top.
We are going to cook it over medium heat until it is poached and browned a little, for which we will stir from time to time so that it does not stick to us. When the onion is soft, we are going to add a little freshly ground black pepper and we will add the four types of chopped cheeses, so that they melt more easily.
