Russian sauce recipe for fish
- 150 grams of mushrooms
- 100 grams of cream cheese
- 50 grams of butter
- 150 ml of liquid cream

Now we are going to show you in detail how to prepare a great Russian sauce, a sauce that is ideal to serve with fish and seafood dishes, which in addition to being a very rich and complete sauce, can also be considered a garnish, since it is served with pieces of mushrooms and it may seem more like the second than the first. To make it, we are going to use fresh mushrooms whenever we can, which are the most suitable for their flavor and texture, since canned mushrooms do not give a result as good as fresh ones, so try to buy them before using the elaboration of this sauce.
When starting the preparation of the Russian sauce, the first thing we will do is wash the mushrooms with water under the tap, to remove the dirt that they usually bring. If what we have bought are whole mushrooms then we have to remove the stems, discarding the lower half of them, the one that is buried. Then we are going to chop both the hats and the other non-discarded halves of the stems, which we will do in pieces not too large or too small, since we want the pieces to be noticed in the sauce when we eat it.
Once we have washed and chopped all the mushrooms well, we put them to brown in a frying pan, which we will put over medium heat and in which we add the butter to melt it. Once we have it melted and very hot, we add the pieces of mushrooms and cook them, keeping them over medium heat and stirring from time to time, so that they are well marked on all sides. When we see that they are well browned and soft, we season them to taste and add the liquid cream to cook to the pan, stir well to mix everything and let it cook for a couple of minutes more or less.
After this time we remove the pan from the heat and let the mixture warm up a bit, and at that time we add the cream cheese and a little dill, either fresh or dry, stir well so that all the ingredients are mixed well. At the end and once we have a homogeneous-looking sauces, we pour it into a closed container and let it cool in the refrigerator until it is time to serve our Russian sauce, which is served rather cold. This sauce can be kept in the fridge for several days, in case there is no excess.
