Then we peel the cucumbers, open them and remove all the seeds, then grate them with a grater and let them drain in a colander. We add a handful of salt to them and mix, so they will release all the liquid, since we want them to be well drained, so that the sauce is not liquid. This step is very important so that the tzatziki sauce has the right texture, since if it is not done like this it will be too liquid.
In the same container where we had added the crushed garlic, we are going to add the two yogurts, the freshly squeezed lemon juice, the good quality virgin olive oil, the pepper and a little chopped dill or mint as an option.
