Cold Pink Sauce (Salsa Rosa) Recipe
- 150 grams of mayonnaise
- 75 grams of ketchup
- 10 grams of Dijon mustard
- 10 ml of freshly squeezed orange juice
- A splash of brandy or cognac
The pink sauce is a well-known sauce that is normally used to accompany salads, sandwiches or a cocktail, such as the famous seafood cocktail. In the preparation we will use mayonnaise, which can also be made by us or bought, depending on the time we have or depending on how we are interested in using one or the other, we recommend making it yourself, it is healthier and richer.
Once we have the mayonnaise made or bought, we are going to put the indicated amount in a large container, and on it we add the ketchup, the Dijon mustard and the freshly squeezed orange juice, and finally add a splash of brandy or cognac, (some add whiskey) and we are going to mix all the ingredients as well as possible, for which we recommend using some rods, either manual or placed in the blender. For this amount, which is not much, with a few rods at hand we can mix everything well without problems.
When we get to have the mixture well homogeneous and have a good pink tone, we are going to test the sauce in case we need to correct the flavor by adding more of one or more ingredients, to leave it to our liking. After leaving the sauce to our liking, we will put it in a closed container and keep it in the fridge until it is time to use it, so that it is always cold. If we use homemade mayonnaise, we will have to consume the pink sauce in the next 24 or 36 hours preferably, although if we use canonnaise from a pot we will be able to keep it much longer.

200 grams of lettuce

How to make Chicken Salad with Pink Sauce:
The day before: wash, dry and chop the thyme. Wash the chicken breast and cook it in water with a little salt for 10 minutes. Drain the chicken, let it cool and cut it into slices. Season with salt and pepper, sprinkle with thyme, brush with oil and put in the fridge.
Prepare the pink sauce by mixing the mayonnaise with the ketchup and the ingredients that you like the most. Stir until fully incorporated, cover the container with film and also reserve it in the refrigerator.
On the same day: clean the chives by removing the first layer, the roots and the green stem. Wash it, cut it and place it in a bowl with cold water; that way it will taste smoother. Wash, dry and chop the lettuce.
Wash the apple, cut it in half and remove the core. Then, cut it into thin slices. Drain the chives and mix it with the lettuce and chicken. Divide them into four plates, dress them with the sauce and serve.
